Rocky's Frittata
2 Tbs Provisions olive oil
4 fingerling potatoes, cleaned & cut into 1" chunks
1/2 a Walla Walla sweet onion
1 cup fresh chard, cleaned & torn into pieces
12 eggs, cracked & whisked with salt & pepper
3 oz. Fern's Edge goat cheese
 
Preheat your oven to 350. Heat the olive oil in a nonstick skillet over medium heat until hot but not smoking. Add the potatoes and brown, about 7 minutes. Add the onion and chard and continue to cook until the onions have softened & the potatoes are cooked through, about 10 more minutes. Add the eggs, and top with pieces of the goat cheese. Put the pan in the oven for 10-12 minutes and serve.
