SPAM Sushi

4 cup rice
1 package nori
12 oz of SPAM
1 medium carrot
1 bunch broccoli
1/2 cup rice vinegar
4 TBSP sugar
1 1/2 tsp salt
1 tsp wasabi
2 TBSP soy sauce
 
Measure and rinse and drain 4 cups of rice.  Put rice into pan or rice cooker.  Add 4 cups water.  If you're using a rice cooker, turn cooker on.  If you're using a pan, bring to boil, cover and reduce heat to simmer for 20 minutes.
 
While the rice is cooking, make the dressing for the rice.  Combine rice vinegar, sugar, and salt.  Stir the dressing until the sugar is dissolved.
 
Slice SPAM into 1/4-inch wide strips.  Cut the carrot and broccoli into slivers.
 
Once cooked, place the rice in a large bowl.  Sprinkle the dressing on the rice a little at a time while gently folding the rice.  Fan the rice while sprinkling and folding.  Having someone to help fan or using an electric fan makes this easier.
 
Place the bamboo matt so that you can roll up the sushi away from you.  Place a piece of nori on the mat.  Place rice on the nori.  Put strips of SPAM on the rice, starting about one inch away from the edge of the rice.  Put carrot and broccoli slivers on the SPAM.  Roll the mat away from you so the rice completely surrounds the SPAM and vegetable filling.  Roll the sushi roll tightly and hold in palce for about 5 seconds.
 
Slice the roll into 3/4-inch pieces.  Place the sushi on a plate and serve with soy sauce and wasabi.
