Albany Woman Turns Layoff Into Dream Job

ALBANY, Ore.-- Losing a job can be a stressful experience, but for Jessica Stanley, it was a time to do the things she loves do, which lead to her new occupation.

 

The down economy has forced many companies to lay off parts of their workforce, causing many employees to worry about how they'll make a living.  Stanley at first tried to get a job related to the one she used to have.  But after she realized how tough the job market was, Stanley chose to elaborate on a hobby she enjoyed, baking cupcakes.

 

After family and friends tried her blend of cupcakes, they encouraged Stanley to try to sell them.  Stanley wasn't sure at first about making a living off of her desserts, but after she made up her mind, there was no turning back.

 

Stanley started her dessert business, Rocket Queen Cupcakes and now has several different varieties of the cakes.  Some of the flavors include, pumpkin, green tea and even bacon topped cupcakes.

 

Stanley and her husband, Joshua, now spend their days taking orders from local businesses and residents and so far they're doing well.  The couple would like to eventually open their own store and sell their cupcakes and serve coffee.
