Chicken Cacciatore

Pollo Caccitore

Serves 4-6

 

Ingredients:

 

1 cup flour for coating

1/4 tsp. salt

1/8 tsp. pepper

1 whole chicken, cut in 8 pieces

2 Tbsp. olive oil

1 onion, chopped

2 cloves garlic, minced

1 red bell pepper, chopped

16 oz. can diced tomato

2 cups fresh mushrooms, quartered

Salt and pepper to taste

1/2 cup white wine

1/4 tsp. oregano

 

Combine the flour, salt and pepper in a mixing bowl. Coat the chicken pieces in flour mixture. Heat the oil in a large skillet (one with a lid). Fry the chicken until browned on both sides. Remove from skillet.

Add onion, garlic, and bell pepper to the skillet and sauté until the onion is translucent. Return the chicken to the skillet and add the white wine. Evaporate for a few minutes, then add tomato and oregano. Cover and simmer for about 30 minutes on medium to low heat.

Add mushroom and simmer for 10-15 more minutes. Add salt and pepper to taste, then sprinkle with fresh herbs (rosemary, thyme and sage) for a nice aroma.

Chicken Cacciatore - Low Carb Style

This sounds like a wonderful recipe and could easily be made low carb just by eliminating the flour coating on the chicken. I've had Chicken Cacciatore many times that did not have breading on the chicken and it was delicious. Same applies to Chicken or Eggplant Parmigiana.
