Ingredients:

1 whole chicken, cut in half

1Tbsp. sea salt

1 tsp. chili powder

1Tbsp. fresh rosemary, chopped

1 Tbsp. fresh sage, chopped

1 tsp. fennel seed

1 lemon

 

Directions:

Wash chicken in cold water, and dry very well.

Then, rub chicken with lemon.

In a mixing bowl, combine all ingredients and mix well.

Sprinkle the dry mixture on both sides of the chicken and rub with hands.

Refrigerate chicken for at least two hours.

Preheat barbeque to 350 degrees.

Get two bricks and cover with foil.

Spray barbeque with Pam. Put chicken on skin first and cook for 10-15 minutes.

Put a brick on each half of the chicken and cook for 15 minutes.

Turn over chicken, then put bricks back on and cook for an additional 20-25 minutes or until inside temperature reaches 160 degrees.

Remove from heat and let sit for 5 minutes. Cut in half again and serve.
