Salmone al Cartoccio

Serves 6 people

 

1 side of Salmon (3 lbs)

2 minced garlic cloves

2 tbs olive oil

1 tbs chopped fresh rosemary

salt and pepper to taste

2 tbs chopped Italian Parsley

1 lemon (1/2 cut into 6 slices & the other half to squeeze into mixture)

 

In a mixing bowl combine olive oil, squeezed lemon, parsley, garlic, salt, pepper, rosemary.

Lay the Salmon filet skin down on a piece of foil twice the size of the salmon.

Make 6 cuts into the salmon and insert the lemon slices (these will be your portions so make cuts evenly along the salmon).

Rub the mixture all over the Salmon and refrigerate for an hour.

Preheat oven to 350 and after an hour in the refrigerator place salmon (still on the foil) on a baking sheet and loosely fold foil up over salmon and pinch together.

This will help "steam" the Salmon inside the foil.

Cook for 15-20 mins.

When opening the foil, be careful as hot steam will come out!
