EUGENE, Ore. -- You have to be pretty brave to open up a new business in this economic climate, but a Eugene couple thinks they have a recipe for sweet success.
"Everything is from scratch, entirely," says Thaddeus Moore, owner of The Divine Cupcake. "There's no preservatives. There's no fakeness to them at all. And I think it comes across in the flavor."
Difficulty picking one flavor might be the only complaint you could come up with during your visit to the cafe. There are the standards -- chocolate and vanilla -- but also flavors like "Swizzle Stick" and "Bananarama." Those aren't even the most unusual ones.
"We make one that's very unique that I thought up a long time ago called 'Thai Peanut Curry.' It's like a peanut curry that you'd get at a Thai restaurant," describes Moore. "It's spicy, it's rich, it's coconuty and peanut buttery."
The icing on these cupcakes? They're organic and vegan, but don't let that keep you from trying one.
"This really well-known cupcake blogger came, had our cupcakes, wrote up this great review and in the middle of the review, realized -- through looking at our Web site -- that everything we make is vegan. She said -- I think I can quote this -- 'I didn't even know they were vegan. They were that good,'" says Moore.
With reviews like that, he and his wife Emily think the future of Eugene's first cupcakery will be a piece of -- you guessed it -- cake.
The cafe will also offer two flavors of gluten-free cupcakes every day, using a mixture of rice flour, potato starch and tapioca flour instead of wheat flour.
The Divine Cupcake opens up on Friday, March 5 at 10 a.m. It's located at the corner of 11th and Chambers in Eugene.
