Whole anchovies come in two varieties. The most popular is packed in oil, and for a little more flavor you can use anchovies packed in salt. Whole Anchovies - Chop and sauté in butter or olive oil to use as a sauce base. Anchovy Paste - Can be used in a pinch or if you just want to add a hint of flavor. Best used in any savory sauce.
