Tiramisu

Serves 8-10

Cream mixture:
1/2 cups powdered sugar
3 pasteurized egg yolks (optional)
18 oz. mascarpone
1 1/2 cup heavy whipping cream
1/4 cup gran marnier or other orange liqueur

Mix all ingredients into the mixer on low speed until fluffy and set aside.

Espresso/lady finger mixture:
28 lady fingers
1/4 cup gran marnier or other orange liqueur
1/2 coffee liqueur
2 tsp rum
2 cups espresso
2 cups grated bitter-sweet chocolate

Combine all ingredients other than lady fingers. Dip lady fingers into espresso mixture one at a time careful to not over soak. Line the bottom of a 9x9 pan with lady fingers, then cover with a layer of the cream, then sprinkle grated chocolate on top. Repeat for one more layer, and garnish with lady fingers.
