Pasta alla Puttanesca

 
 
Serves Four
 
Recipe:
 
 
1/2 olive oil or extra virgin olive oil
 
1/2 finely diced onion
 
1 finely chopped anchovy
 
1/4 cup red wine
 
4 and 1/2 cups of canned tomatoes
 
3/4 cup capers
 
1 cup kalamata or black sliced olives
 
1 tsp chili flakes
 
salt and pepper and italian seasoning to taste (will not need much salt because of the anchovy, capers, and kalamata olives)
 
- heat up some olive oil on low heat in a medium sized sauce pan. When it is hot, add garlic, onion, anchovy, and wine then saute. Be careful not to burn the anchovy...this will ruin the whole batch
 
- add canned tomato sauce, and let heat until flavors have melded together. Stir in Capers, Olives, and chili flakes and ready to serve! Garnish with parmesan cheese and parsley.
