Recipe
1 lbs unbleached all purpose flour
5 extra large eggs
a pinch of salt
 
Combine the flour and salt on a large pasta board, make a well in the center of flour, lightly beat the eggs and pour the mixture in the middle of the well, using a fork gradually draw the flour from the outside and start Incorporated in to the eggs.
 
Start working the dough with both hands until you have formed a soft playable ball.
 
Cover it with plastic and let it rest for 1hr.
 
Using a pasta machine you can now make different shape follow instruction from your model of pasta machine.
